Hummus Bread

This is bread that you can make if you have a little leftover hummus (1 cup) and want a bread with a little more flavor, but still versatile enough to be used in many different ways. It was good enough for me without anything, although I imagine it would be dynamite as a grilled sandwich, BLT, or egg salad sandwich. It was very soft and fluffy, but I imagine it could also be used as the bread part of toad (egg) in the hole breakfast.

The recipe is fairly straight forward. It’s from the King Arthur Flour website. Enjoy!

Hummus Bread (from King Arthur Flour)

ingredients:

2 1/2 teaspoons instant yeast
1 tablespoon King Arthur Whole-Grain Bread Improver
2 cups King Arthur Unbleached All-Purpose Flour
1 cup King Arthur 100% White Whole Wheat Flour
1 1/2 teaspoons sugar
1 1/2 teaspoons salt
1/3 cup toasted sesame seeds
3/4 cup milk
1 cup prepared hummus (recipe below)
1/4 cup garlic oil
1 large egg

Combine all of the dough ingredients, mix and knead till smooth, and let rise for 1 hour. Shape the dough into a loaf, place the loaf in an 8 1/2 x 4 1/2-inch lightly greased loaf pan, and let it rise, covered, for about 1 hour, or until it’s crowned about 1 inch over the rim of the pan. Bake the bread in a preheated 350°F oven for 35 minutes, or until an instant-read thermometer inserted into the center registers 190°F.

    • It’s funny because I hadn’t heard of it, either. The beauty nowadays is that, if you think up some idea for a recipe, chances are it’s already been done!   3. What’s Whole-Grain Bread Improver? what does it do to the bread? This bread is so perfect looking I thought it was store bought. I love the single and simple step. What is a cup of flour in grams? please let me know. Have a pleasant weekend!

    • Hi Liz, It’s a dough enhancer. See my previous post on pan de leche. I forgot to write that I didn’t use this, but only a teaspoon off the vital wheat gluten that I had. It seemed like a lot for this dough, and as you can see it rose fairly high.       Again, I used a different product, and only 1 teaspoon, but the dough improver has vital wheat gluten AND a couple of other things in it, and I didn’t have it on hand. But it helps the bread rise, and keeps better, basically. So sorry that I don’t have the weight of the ingredients. I just copied and paste from the original. The only thing I did different was use a teaspoon of vital wheat gluten and not a Tablespoon of the KA dough improver. Have a food weekend!
