birthday biscotti

This is a recipe for biscotti that is adaptable for other add ins. I simply wanted to celebrate my **th birthday, so I thought adding 1/4 cup of sprinkles would do the trick. I also added slightly less sugar because I felt the sprinkles might actually contribute to the sweetness. Funfetti Biscotti. Enjoy! Happy Birthday to me!!

ingredients

1 and 1/3 cup all-purpose flour

2/3 cup semolina flour

1/2 teaspoon salt

1/2 teaspoon baking powder

1 teaspoon baking soda

2 large eggs

4 ounces unsalted butter, room temperature

2/3 cup granulated white sugar

1/2 teaspoon almond or vanilla extract

1/4 cup sprinkles or other add-in.

method

Heat oven to 350 degrees F. Line a baking sheet with parchment paper and set aside.

Add the first five flour ingredients into a bowl and stir with a whisk several times.

Cream the butter with the granulated sugar until light and fluffy, then add the eggs, one at a time until blended in.

Add the extract, if using, and blend in again.

Add the flour mixture and stir until all the flour ingredients are wet.

On a floured work surface, shape into two logs that are roughly almost the length of the baking sheet and square the sides and flatten to a height of about 1/2 an inch.

Transfer each log to the baking sheet running parallel to the length of the long sides, with adequate space between the logs in the middle of the baking sheet. each log will spread out and you want to avoid each of them baking into the other.

Place in center of oven and bake for about 25 minutes.

Remove from oven and let sit in baking sheets to cool somewhat, about 10 minutes and lower oven temperature to 280 degrees F.

After each log has cooled 10 minutes, transfer each log to a cutting board and cut biscotti by slicing each log diagonally, with a thickness of about an inch.

Transfer the biscotti slices back to the baking sheet, still using the same parchment paper, and lay cut side down. Arrange all the biscotti slices with space between each slice.

Bake at 280 degrees F., for 10 to 15 minutes, then remove baking sheet from oven and turn over each biscotti over and place baking sheet back in the oven to bake the other side of each biscotti another 10 to 15 minutes.

After baking both sides, remove from oven and let cool completely before adding any additional toppings or dipping the sides in melted chocolate. Enjoy!
