What business does a baking blog have making “no bake” items? Well, it has nutella and coffee, so…does anyone really care? 😉
It’s no bake, except for the crust, but no big deal. 10 minutes in the oven is all you need for the crust. You can probably even skip that, but putting it in the oven for ten minutes really helps bring out the nuttiness of the hazelnuts, which complements the nutella, which of course is made with ground hazelnuts.
I shouldn’t have to warn you, but this is extremely rich and easy to make. Make this at your own risk! Make sure you share it with others.
No Bake Coffee Nutella Pie
ingredients
1 package of graham crackers
1/2 cup chopped hazelnuts (can use almonds if you don’t have hazelnuts)
1 Tablespoon molasses
1/2 cup unsalted butter, melted
1 Tablespoon instant coffee granules, like Folgers
1 and 1/2 Tablespoons vanilla extract
6 ounces cream cheese, softened
3/4 cup Nutella chocolate hazelnut spread
3/4 cup sour cream
3 tablespoons honey
3/4 cup whipping cream, very cold
method
Preheat oven to 350 degrees F. Take the first two ingredients and place in a food processor, pulsing until they are crumbled. Add the molasses and melted butter and pulse again until moist. Press into a 9-inch pie pan and bake at 350 degrees for 10 minutes. Let rest on a rack to cool at least 30 minutes before filling.
For filling, dissolve the coffee granules in the vanilla extract and place it into a large bowl. Whisk it briefly.
Place the cream cheese, Nutella, sour cream and honey in the bowl and use a hand held mixer to beat it so that it’s smooth and without major clumps.
Add the whipping cream slowly in a stream and beat until incorporated. Continue to beat for about 5 minutes.
Pour into the prepared pie shell and refrigerate overnight. If you have extra, just place it in a small ramekin for an individual dessert.
You can serve this pie with some whipped cream, chopped hazlenuts, maybe even a drizzle of chocolate or caramel sauce.
Or just serve it plain, since it is very rich. Enjoy!
